Elysian Springs 'Pennies from Heaven' Sauvignon Blanc

~The Story~ This wine is named in honour of the much cherished winter rains which fall like ‘pennies from heaven’, replenish our soils and allow the vines to flourish during the growing season. ~Tasting Notes~ Lively and aromatic with notes of fresh-cut grass, green pear, and nettles. On the palate there is intense flavor, with fresh, limey fruit, mouthwatering acidity, and remarkable purity. It is bone dry and un-oaked to maintain freshness. ~Winemaking~ Whole bunches from our most distinctive Sauvignon Blanc vineyard were hand selected and picked in the cool of the early morning then de-stemmed without crushing the fruit. Gentle pressing followed and the free run juice was then fermented in small stainless steel tanks between 12 to 14 degrees Celsius, ensuring the lively white grapefruit flavours and aromas were retained. It was then bottled directly thereafter without fining and with minimal filtration to capture the purity of taste and texture. We hope you feel you have gotten every penny’s worth!
