COLOUR: Deep red.
NOSE: Aromas of black berries, anise, mocha, pepper and spice. Cigar box and savoury notes play a supporting role.
PALATE: Dark berries, coffee and chocolate feature boldly on the palate. Great balance has been Achieved between the fruit, acid, oak and tannins. A wine that will keep on giving for 20+ years.
WINEMAKING: This is an Amarone style wine made from Shiraz grapes. The grapes are hand-picked, just before flavour ripeness, into individual 10kg buckets and then laid out onto separate racks to dry. The drying is carried out in a purpose built, fully insulated shed complete with high intensity air fans to aid the drying process. The length of drying time varies each year and is influenced by a variety of factors including the ripeness of the grape, the ambient heat and humidity and the flavour on tasting. This drying process intensifies the flavours of the grape without losing any of the natural acids present in the grape on picking. The Baumé of the grape is increased during this process by between 0.5 ° and 1.5 °. After drying the grapes are processed in the usual manner into this super premium 'Amarone' style.
FOOD PAIRING: This full bodied wine deserves to be paired with some strong flavoured dishes in the traditional Italian style. Try Bigoli con’Anara (fresh pasta with duck sauce), Osso Bucco with a hunk of Parmigiano Reggiano; or is great just on its own!

VINTAGE NOTES: The 2016 vintage began with well below-average winter rainfall, followed by a warm and dry spring and one of the hottest Decembers on record. Then, rain relief early in the year allowing flavours to develop in optimal conditions. Our magnificent old vines have seen it all and the quality of fruit this vintage is again, extremely high.
