~WINEMAKING~
My opinion is that good Cabernet must have ripe fruit with just enough herbaceousness to let you know it’s Cabernet. For the first time ever at Tokar Estate, the Cabernet was bottled before the following vintage. The structure had settled into itself early and the wine was ready. Tokar is one of the warmest sites in the Yarra Valley being North facing on the Yarra Valley floor – consistently ripens Cabernet better in this area. 100% French oak – 35% new. Wild ferment, wild malo, no fining or filtration.
~THE WINE STYLE~
This Cabernet Sauvignon was hand picked from our Estate before undergoing small batch fermentations with wild yeasts and maturation in French oak barrels. This classically styled Yarra Cabernet was bottled without fining or filtration to optimise the expression of the Tokar Estate site. Those with the patience to cellar will be rewarded. Gold Medal at the 2015 Royal Melbourne Wine Show, which is our third in three vintages for this wine.
