TOKAR ESTATE CHARDONNAY 2014 - 6 x 750ml bottles

2014 Chardonnay ~WINEMAKING~ From our low yielding two acre block, it is picked early when flavour is in the lemon/lime to stone fruit spectrum. The fruit is then pressed, chilled slightly and the very cloudy juice put to barrel with a wild ferment in 100% 'second use' 500L French oak puncheons. Each barrel allowed a small amount of malo for acid balance and interest and bottled within nine months of harvest to retain freshness and drive. ~THE WINE STYLE~ This Chardonnay was picked from our two acre Chardonnay block at optimal ripeness on (date). Once pressed, the juice was barrel fermented by wild yeasts in 500L French oak puncheons. Whilst deliciously crisp and tightly wound when young, this wine will unravel with time, rewarding those with the patience to cellar.
